This project involves the conversion of a vast, 7-metre-high hangar, situated near the Saint-Louis sugar refinery on Réunion, into a new premises for the Coco Cannelle bakery, which already has branches in Saint-Denis, Saint-Pierre and L’Ermitage. For this new space, the brand wanted to showcase its expertise through a striking concept: the transparency of the production workshops.

The idea was therefore to preserve the hangar’s character and its metal columns, whilst creating glass canopies and using warm colours (paint, tiles, wood). The generous ceiling height was deliberately reworked to meet technical requirements and to incorporate air conditioning. A new structure combining wood and metal was thus devised to support the ceiling across the entire space.
